The ship may be permanently moored, but R.S. Hispaniola’s new spring menu hopes to transport diners around Europe, with 22 dishes that reflect the depth and diversity of the region’s flavours.
Behind the latest offerings is the restaurant’s newly appointed Head Chef, Barry White, who brings with him experience and a global perspective, having worked in kitchens in Thailand, Jamaica and London.
The new menu reflects the “tastes of spring” with a focus on seasonal produce. Highlights include the seared sea trout, the lobster thermidor, and a melt-in-your-mouth blueberry, apple and pistachio crumble for dessert.
